How do you make the perfect pancakes? Well you need to start with a good pan.

Fresh and Fruity Pancake Recipe

For the pancake mix:

110g plain flour

2 eggs

A pinch of salt

50g butter

200ml milk

75ml water

To serve:






Sift the flour and salt into a large mixing bowl. Break the eggs into the mixture and whisk. Mix the milk and water together in a jug and begin slowly adding to the flour while continually whisking. Whisk until the batter is smooth.

Now melt the 50g butter into a saucepan, spooning two tbsp of the melted butter into the pancake mixture. Whisk the butter into the mixture until smooth. Use the remaining melted butter to grease the Staub Pancake Pan before each pancake.

Heat the Staub Pancake Pan to a medium heat and then turn down slightly. Spoon two tbsp of the pancake mixture into the Staub Pancake Pan and use the spreader to spread the mixture evenly over the base of the pan. Lift the edge of the pancake with the spatula to see if it is golden underneath, if it is flip it or wait until golden.

Serve with raspberry and blackberry coulis, blueberries, and stack with sliced bananas.
